Immune-Boosting Mushroom Soup

This mushroom soup is something I make when I want food that feels restorative without being complicated. It’s built on mushrooms, garlic, ginger, and warming spices — simple ingredients that come together into something grounding and nourishing.

Ingredients

• Mixed mushrooms, sliced

• Onion or shallot, chopped

• Garlic cloves, minced

• Fresh ginger, grated

• Ground turmeric, to taste (about ½ teaspoon), or fresh turmeric, finely grated (about 1 teaspoon)

• Olive oil or butter

• Vegetable or chicken stock

• Optional dried mushrooms (for depth)

• Salt and black pepper

• Optional additions: turmeric, thyme, or parsley

Instructions

1. Heat olive oil or butter in a pot over medium heat.

2. Add onion and cook until soft. Stir in garlic, ginger, and turmeric and cook briefly until fragrant.

3. Add mushrooms and cook until they release their moisture and begin to brown.

4. Add stock (and dried mushrooms if using) and bring to a gentle simmer.

5. Cook for 20–30 minutes, allowing the flavors to develop.

6. Season with salt and pepper and finish with herbs or spices as desired.

Notes & Variations

• Use a mix of mushrooms for the best flavor.

• Turmeric adds warmth and color; a small amount goes a long way.

• Blend part of the soup for a thicker texture if desired.
