Marinara Sauce

Recipe: Marinara Sauce

Summary: A simple and delicious base sauce

Ingredients

  • 2 28 oz cans whole plum tomatoes
  • 1 28 oz can crushed tomatoes
  • 5 cloves of garlic minced
  • 1/2 cup water
  • 1 tsp sugar
  • 1 tbsp oregano
  • 1/2 tsp basil
  • pinch of crushed red peppers
  • 1 bay leaf
  • 1 tsp Salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil

Instructions

  1. Put the whole tomatoes through the food mill if you have one, otherwise, use your hands to crush or just use 3 cans of crushed tomatoes and add a little more water.

    Heat up a pot on medium-high and add the garlic. Stir the garlic until golden brown then quickly add the tomatoes. Add the rest of the ingredients and bring to a boil, then let simmer for about 40 minutes for a fresh tasty sauce, longer if you like a dark richer sauce.

    This is a base sauce that tastes great on its own over spaghetti or to be used in a Chasseur (hunters sauce), Fra Diavolo, or any other dish that needs tomato sauce that will develop its own flavor.

    If the sauce is bitter, sweat more onions and or garlic and add. Also, you can add puree or paste for a richer flavor.

Variations

Many people add onions also. If you want, add 1/2 a cup.
